Swedish Rhubarb Pie
1 double crust
3 cups diced rhubarb
1 ½ cup sugar
1 tsp cinnamon
¾ cup butter or margarine, melted
1 cup King Arthur Unbleached All-Purpose Flour
½ cup chopped walnuts
1 pinch of salt
Preheat your oven to 350°F.
Fill the bottom crust with the diced rhubarb. Sprinkle with ½ cup of the sugar and the cinnamon. In a separate bowl, combine the butter or margarine, the remaining cup of sugar, the flour, egg, nuts and salt. Spoon this mixture over the rhubarb.
Cover with the upper crust and bake for 45 to 50 minutes or until golden brown.
