Pesto Salami Tortellini using Family Farms Salami



Many years ago I used to make this for Farmer Chris...but it never seemed right because we didn't want to use store bought salami that includes nitrates.  Farmer Chris did research to find a processor that could make salami without chemicals...and finally we are offering Salami (beef/pork) that has no additives, so last night I had this ready for him to eat after a long day of getting 50 sheep sheared! Pesto Salami Tortellini

  • 1 9 -ounce package refrigerated cheese filled tortellini
  • 1 medium tomato, chopped
  • 1/2  cup pesto sauce
  • 3 ounces salami (chopped) - I usually use a little more
  • Thin tomato slices (optional)
Directions:
Cook tortellini according to package directions.  Place chopped tomato in a large colander; drain pasta over tomato.  Return mixture to a hot pan.  Place in a medium mixing bowl.  Add pesto and salmi; toss gently till pasta is coated with pesto.  Serve warm on individual plates lined with a few pieces of thinly sliced tomato or in a bowl for a buffet.  This fed Chris and I :)



Needless to say there is no left overs, but we had a happy sleepy farmer snoring on the couch immediately following.
